Our Aged Soy Sauce (頭抽) is a first-press, naturally brewed soy sauce aged for over 12 months to achieve a deep mahogany color and a complex, umami-rich profile. This premium soy sauce is often referred to as "first extract" because it comes from the initial pressing of fermented soybeans—making it the most fragrant, flavorful, and less salty compared to later pressings.

Ideal for dipping, stir-frying, or drizzling over freshly steamed rice, head soy sauce is a treasured ingredient in Cantonese cuisine, often used in soy chicken, braised tofu, and blanched greens (白灼菜). Its smooth texture and savory depth enhance dishes without overpowering their natural taste.
